Chocolate Pumpkin Pie Fudge with Hemp Seeds

Because clearly, pumpkin is having a moment, and we clearly have a sweet tooth, we made chocolate pumpkin pie fudge with hemp seeds. Rich, creamy, and perfectly decadent, this superfood fudge is the best e-v-e-r answer to your very real Halloween candy cravings.

Raw, vegan, gluten-free, oil-free and paleo, this melt-in-your-mouth combo of coconut butter, pumpkin puree, raw cacao powder, almond butter, maple syrup, pumpkin pie spice and Ceylon cinnamon, is soon-to-be your new favorite dessert, or snack, or breakfast / lunch / dinner, if you decide to pair it with this. (Do it, and enjoy.)

Chocolate Pumpkin Pie Fudge with Hemp Seeds

Makes: 20-ish 1 by 1-inch squares
Ingredients:

1/2 cup coconut butter*
6 tablespoons pumpkin puree (not pumpkin pie filling)
2 tablespoons almond butter
1/4 cup raw cacao powder
1/4 cup maple syrup
1 teaspoon pumpkin pie spice
1 teaspoon Ceylon cinnamon
2 1/2 tablespoons hemp seeds, divided  

Directions:

Add all ingredients except hemp seeds to a food processor and mix until creamy consistency scraping down the sides as necessary. Once mixed, add 2 tablespoons of hemp seeds and pulse until incorporated. Pour/scrape the mixture into a small sealable container lined with parchment paper leveling out the top with a spatula. Sprinkle the remaining hemp seeds (1/2 tablespoon) onto the mixture. Refrigerate for 2-3 hours or until completely set. Remove fudge by lifting the parchment paper and slice it into 1 by 1 inch squares. Store fudge in the refrigerator for up to 1 week. Alternatively, you can store these in the freezer.

Notes for the non-chef:

*Do not replace the coconut butter with coconut oil, they’re very different. Subbing coconut oil will result in a mess.
