Flourless maple chocolate chip peanut butter blondies with chickpeas! (GF + Vegan)

These gluten-free, dairy-free, refined-sugar-free, 100 percent vegan flourless blondies contain an entire can of chickpeas and, despite everything we just said, taste absolutely aaaaamazing. (Even my carnivorous junk food loving boyfriend approves.)

From start to finish, these chocolate chip peanut butter blondies take less than 30 minutes to make, including prep time, cook time, and cleanup! Plus, no one will ever guess they’re hiding an entire can of chickpeas. Make these as a healthy-ish afternoon snack or enjoy anytime dessert. Warning… they’re HIGHLY addictive. The raw batter is also delicious.

Flourless maple chocolate chip peanut butter blondies

MAKES: 10-11 BLONDIES
INGREDIENTS:  

1 can (15 oz) no salt added, chickpeas/garbanzo beans, rinsed well and drained (we used the Wholefoods 365 brand)
1/2 cup + 2 tbsp all natural peanut butter (we used crunchy)
1/3 cup pure maple syrup
2 teaspoons vanilla extract
1/4 tsp salt
1/4 teaspoon baking powder
1/3 cup vegan chocolate chips, heaping

DIRECTIONS:

Preheat oven to 350 degrees Fahrenheit and line a muffin pan with parchment paper baking cups. In a food processor, add all ingredients except chocolate chips and mix until batter is smooth and creamy. Once processed, stir in heaping 1/3 cup chocolate chips. Scoop batter evenly into parchment baking cups. You can smooth out tops but it’s not necessary. Bake for 20-25 minutes or until edges are slightly brown and toothpick comes out clean. Let cool. Eat and enjoy. Store any extra in an airtight container on the counter. (Do not share.) Refrigerate leftovers after day 2.

NOTES FOR THE NON-CHEF:

To switch things up, try subbing almond butter for the peanut butter or cannellini beans in place of chickpeas.
Although it’s not necessary, you can remove the chickpea skins after rinsing them. Jess finds this highly cathartic (but she’s weird).
In honor of going waste-free, reserve the chickpea brine (aquafaba) to make these.
