Apple Pie Health-ified: High Vibe Apple Crisp Recipe

We’re in the kitchen today cooking up another fall favorite, high vibe apple crisp.

Baked apples sprinkled with cinnamon and topped with a delicious maple oat crumble, it was love at first bite. A much healthier alternative to apple pie, and so easy to make, this apple crisp is our new go-to dessert for fall.

Hot & Healthy Tip On Apples:
As mentioned in our seasonal produce guide, conventionally grown apples (PLU sticker beginning with either 3 or 4), are exposed to a lot of chemicals and pesticides so look for organic apples whenever possible (PLU sticker beginning with the number 9), or pick your own. The best apples to bake with should hold their shape and not turn mush when cooked (we’re not making applesauce!). We like cortland and honeycrisp, but feel free to use whatever variety you prefer. 

Hot & Healthy Tip On Cinnamon:
Although it’s a bit more expensive and harder to find than typical supermarket varieties, we use ceylon cinnamon for it’s health benefits and flavor. 

Apple Crisp Recipe

High Vibe Apple Crisp

Apple Cinnamon Filling
5 honey crisp apples (peeled & cored)
1 tsp cinnamon
1/4 tsp nutmeg or allspice (optional)

Oat Crumb Topping
3/4 cup oat flour (use gluten-free if needed)
3/4 cup rolled oats (use gluten-free if needed)
1-2 tsp cinnamon
1/4 cup coconut oil (solid)
1/4 cup coconut sugar
2 tbsp maple syrup
pinch salt

Directions:
-Preheat oven to 375 degrees. 
-In a large mixing bowl combined oat crumb topping ingredients (oat flour, rolled oats, cinnamon, coconut oil, coconut sugar, maple syrup, salt), with your fingers until crumbly. Place in fridge until ready to use. 
-Peel, core, and chop apples. In a large bowl combined chopped apples and cinnamon. Brush a bit of coconut oil onto the bottom of your baking dish, add the apples, and sprinkle with the crumble mixture. Bake for about 35 minutes. Apple crisp is ready when crumble topping is golden brown. Let cool for 10 minutes before serving. 

Notes: 
-To make your own oat flour, pulse 1 cup rolled oats in your high powered blender or food processor until you have a fine powder (about 2-3 minutes). 
-This is amazing topped with coconut milk ice-cream and homemade coconut whipped cream.
