This may just be our favorite recipe of all time. It requires one ingredient: raw unsweetened shredded coconut, a food processor, and 10 minutes later — pure high vibe plant food perfection. Enjoy!
Homemade Coconut Butter
Yields: 1 8oz mason jar
about 2 cups raw, organic unsweetened shredded coconut (use more or less depending on the size of your food processor
Place the unsweetened shredded coconut into the food processor. Turn the food processor on and watch the magic happen. Let the food processor run for about 10-15 minutes or until you have a completely smooth butter (ours takes 8 minutes cause our food processor is bomb), but times will vary depending on the type of food processor. Store in a jar at room temperature, it will thicken and solidify as it cools.
A jar of this stuff sells for about $12 so definitely give this a try! Use coconut butter in smoothies, desserts or eat it straight out of the jar. Our favorite way to use it is melted on sweet potato fries, so good.
